With the arrival of summer, the craving for cold and delicious drinks rises. Almond shake is a perfect choice—not only incredibly tasty but also nourishing for the body. When made thick and creamy like traditional rabri, it becomes a truly indulgent treat.
Ingredients:
- Almonds – 10-12 (soaked overnight)
- Milk – 500 ml
- Cream – 50 g (adjust as needed)
- Sugar – 3-4 tablespoons (to taste)
- Saffron – a few strands (optional)
- Cardamom powder – ½ teaspoon
Method:
- Prepare the almonds
Peel the soaked almonds and grind them into a fine paste. For extra creaminess, you can soak them in warm water for 5 minutes before grinding. - Mix milk and cream
In a pan, heat the milk on medium flame. Add sugar, saffron, and cardamom powder and stir well. Mix in the cream to give the shake a rich, rabri-like texture. - Add almond paste
Stir in the almond paste into the warm milk, continuously mixing to avoid lumps. For a thicker shake, simmer on low heat for 10-15 minutes until the milk slightly reduces. - Serve chilled
Pour the prepared shake into glasses after cooling. Garnish with chopped almonds and a few strands of saffron.
