Ripe pineapple – 1 cup, finely grated

Method:
Lightly sauté the grated pineapple on low heat to remove excess moisture. Add condensed milk and cook, stirring continuously, until the mixture thickens and leaves the sides of the pan.
Remove from heat and mix in desiccated coconut and cardamom powder. Allow the mixture to cool slightly, then shape into round laddoos. Roll them in extra coconut if desired.
