Ingredients
- Carrots – 1 kg (grated)
- Full-cream milk – 1 cup
- Pure ghee – 4 to 5 tablespoons
- Mawa (khoya) – 200 grams (grated)
- Sugar – ¾ cup (adjust to taste)
- Cardamom powder – ½ teaspoon
- Cashews and almonds – finely chopped
- Raisins – 1 tablespoon
Method
Begin by heating ghee in a heavy-bottomed pan. Add the grated carrots and sauté on medium heat, stirring continuously until the raw aroma disappears and the carrots release a pleasant fragrance.
Pour in the milk and allow the mixture to cook on low heat until the milk is absorbed and the carrots soften completely. Add the grated mawa and mix well, allowing it to blend smoothly into the mixture.
Now add sugar and stir continuously. The mixture will loosen initially as the sugar melts, but soon it will thicken again and begin to leave the sides of the pan. Add cardamom powder, chopped nuts, and raisins, and cook for a few more minutes.
Once the mixture cools slightly, grease your palms with a little ghee and shape it into soft, round laddoos.
