Milk Cake is one of those classic Indian sweets that beautifully blends simplicity with rich taste and tradition. Made by slowly reducing milk and cooking it until it thickens, this sweet has a dense, grainy texture and a deep caramelized flavor. Despite its minimal ingredients, Milk Cake holds a royal place among festive desserts.

Ingredients Required

  • Full cream milk – 2 liters
  • Sugar – 150 to 200 grams (as per taste)
  • Lemon juice or vinegar – 1 to 2 tablespoons
  • Ghee – 2 tablespoons
  • Cardamom powder – ½ teaspoon (optional)
  • Chopped dry fruits – for garnishing

Method of Preparation

Start by pouring full cream milk into a heavy-bottomed pan and bring it to a boil. Keep stirring continuously on medium flame to prevent it from sticking to the bottom.

Once the milk starts thickening slightly, gradually add lemon juice or vinegar. This will cause the milk to curdle, separating into whey and solids.

Continue stirring the mixture on low to medium heat until most of the moisture evaporates and it becomes thick, grainy, and slightly golden in color. This slow cooking process is what gives Milk Cake its unique texture.

When the mixture turns thick and starts leaving the sides of the pan, add sugar. At this stage, the mixture may become slightly loose again, but continue cooking until it thickens once more.

Now add ghee and cardamom powder for aroma and richness. Ghee enhances both texture and flavor, giving it a smooth finish.

Cook on low flame until the mixture becomes dense, slightly caramelized, and completely leaves the pan. Pour it into a greased tray and spread evenly. Garnish with chopped dry fruits and gently press them in.

Allow it to cool at room temperature, then let it set for a few hours until firm.

Serving Suggestion

Once set, cut the Milk Cake into square or diamond-shaped pieces. It is perfect for festivals, celebrations, or as a sweet treat after meals. It pairs beautifully with tea or warm milk.

Special Tip

For a richer taste and deeper color, cook the mixture a little longer on low flame. This enhances the caramelized flavor, making the Milk Cake even more delicious and authentic.
