Mango Gulab Jamun is a creative twist on the classic Indian sweet, combining the richness of traditional gulab jamun with the tropical sweetness of mango. Ingredients
For the dough:
- 1 cup milk powder
- 1/4 cup all-purpose flour (maida)
- 1/4 teaspoon baking soda
- 2 tablespoons ghee
- 1/2 cup milk (as needed for soft dough)
For mango flavor:
- 1/4 cup thick mango pulp (fresh or canned)
- 1–2 tablespoons powdered sugar (optional, depending on sweetness)
For sugar syrup:
- 2 cups sugar
- 2 cups water
- 3–4 cardamom pods (crushed)
- 1 teaspoon rose water or a few saffron strands
For frying:
- Ghee or oil (for deep frying)
Preparation Method
1. Prepare the sugar syrup
In a pan, add sugar and water. Heat until the sugar completely dissolves. Add crushed cardamom and simmer for 5–7 minutes. Turn off the flame and add rose water or saffron. Keep the syrup warm (not boiling).
2. Make the dough
In a mixing bowl, combine milk powder, maida, and baking soda. Add ghee and mix well until it becomes crumbly. Slowly add milk and knead into a soft dough.
Now gently mix mango pulp into the dough. The dough should remain soft but not sticky. If needed, adjust with a little milk or milk powder.
Let it rest for 10–15 minutes.
3. Shape the gulab jamuns
Take small portions of dough and roll them into smooth, crack-free balls. Make sure there are no cracks, as they may break while frying.
4. Frying
Heat ghee or oil on low flame. The temperature should be medium-low for even cooking.
Fry the balls slowly, turning them gently until they become golden brown. Do not rush the process, as gulab jamuns need slow frying for a soft texture.
5. Soak in syrup
Immediately transfer the fried gulab jamuns into warm sugar syrup. Let them soak for at least 1–2 hours so they absorb the syrup and become soft, juicy, and flavorful.
Serving Suggestion
Serve Mango Gulab Jamun warm or chilled. You can garnish with:
- Chopped pistachios
- Saffron strands
- A few drops of mango pulp on top for extra flavor
