Healthy and Tasty Veg Kebabs at Home

In today’s fast-paced lifestyle, we often look for snacks that are quick to prepare, nutritious, and satisfying. Veg kebabs fit perfectly into this category. Crisp on the outside and soft inside, these flavorful bites make an excellent tea-time snack, party starter, or even a lunchbox treat. Simple ingredients and minimal cooking time make them a reliable recipe for every kitchen.

Ingredients (Serves 4–5)

  • 3 medium-sized boiled potatoes
  • 1 cup boiled mixed vegetables (carrot, peas, beans)
  • 1/2 cup bread crumbs
  • 2 tablespoons cornflour
  • 1 finely chopped green chili
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon chaat masala
  • Salt to taste
  • 2 tablespoons finely chopped fresh coriander
  • Oil for shallow frying

Method

1. Prepare the mixture
Mash the boiled potatoes thoroughly in a large bowl. Add the boiled mixed vegetables and lightly mash them so they blend well with the potatoes.

Mix in the ginger-garlic paste, green chili, garam masala, red chili powder, chaat masala, and salt. Add chopped coriander and combine everything evenly.

2. Bind the mixture
Add cornflour and half of the bread crumbs to the mixture. This helps bind the kebabs and gives them a crisp texture. If the mixture feels too soft, add a little more bread crumbs until it holds shape easily.

3. Shape the kebabs
Divide the mixture into small portions and shape them into round patties or elongated kebabs as preferred.

4. Cook to perfection
Heat a little oil in a non-stick pan over medium heat. Place the kebabs on the pan and cook until golden brown and crisp on both sides.
For extra crispiness, they can also be lightly deep-fried.

Serving Suggestions

Serve the hot veg kebabs with mint-coriander chutney, tamarind chutney, or tomato ketchup. A light sprinkle of chaat masala on top enhances the flavor even further.

Helpful Tips

  • Add grated paneer or boiled soy granules to increase the protein content.
  • For a healthier option, bake them at 180°C for 15–20 minutes until golden.
  • For fasting-friendly preparation, replace regular salt with rock salt and bread crumbs with water chestnut flour.
