Ingredients
- Raw mangoes – 2 medium-sized
- Sugar or jaggery – 1 cup
- Salt – as per taste
- Black salt – 1 teaspoon
- Red chili powder – 1/2 teaspoon
- Roasted cumin powder – 1 teaspoon
- Fennel seeds – 1 teaspoon
- Water – 1 cup
- Oil – 1 teaspoon
- Mustard seeds – 1/2 teaspoon
Method
First, wash the raw mangoes, peel them, and cut them into small pieces. Remove the seed if needed.
Heat a little oil in a pan. Add mustard seeds and fennel seeds, allowing them to crackle lightly.
Now add the chopped mango pieces and sauté for 2 to 3 minutes.
Pour in water and cook until the mango becomes soft.
Once the mango softens, add sugar or jaggery and keep stirring continuously.
Now add salt, black salt, red chili powder, and roasted cumin powder. Cook the mixture on low flame until it thickens.
When the chutney becomes glossy and reaches a thick consistency, turn off the heat and let it cool completely.
How to Store
Once cooled, transfer the chutney into a clean and dry glass jar. Store it in the refrigerator, where it can stay fresh for 10 to 15 days.
