Curd Gujiya: A Fresh Take on a Classic Sweet

Holi is not just about colors; it’s also about enjoying delicious sweets. This year, give a modern twist to traditional treats by making curd gujiya at home. This recipe is not only delightful in taste but also simple to prepare.

Ingredients:

For the Gujiya Shell:

  • All-purpose flour – 2 cups
  • Ghee – 4 tablespoons
  • Water – as needed

  • Khoya (mawa) – 1 cup
  • Curd – ½ cup (beaten)
  • Sugar – ½ cup
  • Dry fruits (cashews, almonds, raisins) – ¼ cup, finely chopped
  • Cardamom powder – ½ teaspoon

For Frying:

  • Ghee or oil – as required

Method:

1. Prepare the Gujiya Dough:
Mix flour with ghee thoroughly. Add water gradually to make a firm dough. Cover it with a damp cloth and let it rest for 15 minutes.

2. Prepare the Filling:
In a bowl, combine the beaten curd and khoya. Add sugar, dry fruits, and cardamom powder, and mix well. If the curd is too watery, increase the khoya slightly.

3. Shape the Gujiya:
Divide the dough into small portions and roll each into a thin circle. Place the filling in the center and seal the edges using a little water.

4. Fry the Gujiya:
Heat ghee or oil in a pan. Fry the gujiyas on medium heat until golden brown. Place them on a kitchen towel to absorb excess oil.

5. Serve and Enjoy:
Let the gujiyas cool slightly before serving. These curd gujiyas have a unique sweet-and-slightly-tangy taste, setting them apart from the traditional version.

Tip: You can also add a hint of saffron or rose essence to make them even more special and aromatic.
