When the natural sweetness of dates meets the richness of creamy milk, it transforms into a dessert that is not only indulgent but also nourishing. Dates Kheer is a delightful treat suitable for festive occasions or even as a wholesome everyday dessert. Its simple yet nutritious ingredients make it a traditional dessert with a modern health twist.

Ingredients:

  • Milk: 1 liter (full cream is ideal)
  • Dates: 10-12 large, finely chopped
  • Rice: ½ cup (soaked for 30 minutes)
  • Sugar: 3-4 tablespoons or to taste
  • Ghee: 2 tablespoons
  • Green cardamom: 4-5 (ground)
  • Almonds and cashews: 10-12 each (chopped, for garnish)
  • Saffron: 5-6 strands (optional, for color and aroma)

Method:

  1. Boil the milk: Heat the milk on medium flame, stirring continuously to prevent it from sticking to the bottom. Cook until it thickens slightly.
  2. Add the rice: Once the milk is slightly thickened, add the soaked rice. Reduce the flame and cook until the rice becomes soft, about 20-25 minutes.
  3. Incorporate dates and sugar: Add the chopped dates and sugar to the cooked rice. Dates add natural sweetness and depth of flavor to the kheer.
  4. Enhance with ghee and cardamom: Stir in the ghee and ground cardamom. Ghee adds creaminess, while cardamom gives a warm, aromatic touch.
  5. Garnish: Pour the kheer into serving bowls and garnish with chopped almonds, cashews, and saffron strands if using.
  6. Serve: Dates Kheer can be enjoyed warm or chilled. Chilling often enhances its flavors further.

Special Tips:

  • Stir occasionally to prevent the kheer from becoming too thick or sticking to the pan.
  • For a sugar-free version, substitute sugar with honey or jaggery.
  • Dates Kheer is a rich dessert but also provides energy and nutrients, making it a perfect treat for all ages.
