Ingredients

  • Bajra (pearl millet) flour – 1 cup
  • Desi ghee – 1/2 cup
  • Jaggery (grated) or sugar – 3/4 cup (as per taste)
  • Milk – 1 cup
  • Water – 1 cup
  • Cardamom powder – 1/2 teaspoon
  • Cashews, almonds, raisins – as required (chopped)

Method of Preparation

Heat desi ghee in a heavy-bottomed pan. Once the ghee melts, add the bajra flour and roast it on a low flame, stirring continuously. The flour will slowly change color and release a nutty aroma, indicating that it is properly roasted.

Now, gradually add milk and water while stirring continuously to avoid lumps. The mixture will begin to thicken and turn smooth. Add the jaggery or sugar and mix well. Once the sweetener dissolves, the halwa will loosen slightly and then thicken again to the desired consistency.

Finally, add cardamom powder and chopped dry fruits. Cook for another 3–4 minutes, allowing all the flavors to blend well. When the ghee starts separating from the sides, the bajra halwa is ready to be served.
