- 2 medium-sized raw mangoes
- 1 cup yogurt (curd)
- 2 tablespoons gram flour (besan)

- ½ teaspoon fenugreek seeds (methi dana)
- 2–3 dried red chilies
- 8–10 curry leaves
- 2 tablespoons oil or ghee

- 3 cups water
- 1 teaspoon coriander powder
- A pinch of asafoetida (hing)
How to Make Raw Mango Kadhi:
- Prepare the mangoes: Peel the raw mangoes and cut them into small pieces. Set aside.
- Mix the curd base: In a bowl, whisk together yogurt and gram flour until smooth with no lumps.
- Make the kadhi mixture: Add turmeric powder, red chili powder, coriander powder, and water to the yogurt-besan mix. Stir well until combined.
- Cook the kadhi: Pour the mixture into a pan and cook over medium heat, stirring continuously to avoid curdling. Bring it to a gentle boil.
- Add mangoes: Add the chopped raw mango pieces and cook for 10–15 minutes until they soften.
