When summer arrives, markets are filled with fresh raw mangoes, bringing with them countless delicious possibilities. One of the most popular traditional preserves made from raw mangoes is Murabba—a sweet, flavorful delicacy that combines taste and nutrition in every bite. With its rich texture, aromatic flavor, and long shelf life, raw mango murabba is a favorite accompaniment to meals and snacks across many households.

Ingredients

  • 1 kilogram raw mangoes
  • 1 kilogram sugar
  • 1 teaspoon alum (fitkari)
  • 1 teaspoon cardamom powder
  • A few strands of saffron (optional)
  • Water, as required

Method of Preparation

Begin by washing the raw mangoes thoroughly. Peel the skin and cut the mangoes into large pieces, or keep them whole if preferred.

Dissolve the alum in a large bowl of water and soak the mango pieces in it for about 3–4 hours. This step helps maintain the texture and appearance of the mangoes.

After soaking, rinse the mangoes well with clean water. Bring a pot of water to a boil and blanch the mango pieces for 5–7 minutes until they become slightly tender. Be careful not to overcook them. Drain and set aside.

In a deep pan, combine the sugar with about two cups of water and cook until a light syrup forms. Once the syrup reaches a one-string consistency, add the blanched mango pieces.

Allow the mixture to simmer on low heat, stirring occasionally. As the mangoes absorb the syrup, they will become glossy and translucent. This process usually takes about 20–25 minutes.

Add the cardamom powder and saffron strands, if using, and cook for a few more minutes. Remove the pan from the heat and allow the murabba to cool completely.

Storage Tips

Transfer the cooled murabba into clean, dry glass jars. Store it in a cool, dry place. When properly stored, raw mango murabba can remain fresh and flavorful for several months.
