During Navratri fasting, eating only fruits and light meals for nine days can sometimes lead to low energy. Ingredients for Samak Khichdi:
- Samak Rice (Barnyard Millet) – 1 cup
- Potatoes – 1-2 (chopped into small cubes)
- Cumin Seeds (Jeera) – 1 teaspoon
- Black Pepper Powder – ½ teaspoon
- Green Chili & Ginger Paste – 1 teaspoon (or finely chopped)
- Desi Ghee (Clarified Butter) – 1 tablespoon
- Rock Salt (Sendha Namak) – as per taste
- Fresh Coriander Leaves – for garnish
- Lemon Juice – 1 teaspoon
How to Make Samak Khichdi:
- First, clean and wash the Samak rice thoroughly with water.
- Soak them in water for at least 1 hour.
- Heat desi ghee in a pan or pressure cooker and add cumin seeds. Let them crackle.
- Now, add green chili and ginger paste and sauté for a few seconds.
- Add black pepper powder and stir for a few seconds.
- Add chopped potatoes and sauté well. (You can also add carrots or any other fasting-friendly vegetables).
- Drain the soaked Samak rice and add them to the pan. Stir and roast for 2 minutes.
- Add rock salt and water based on your preference:
- For a softer khichdi – Add 3 cups of water.
- For a fluffy, separate-grain texture – Add 2 cups of water.
- If using a pressure cooker, cook for 1-2 whistles. If using a pan, cover and cook on low flame until the rice is soft.
- Once cooked, garnish with fresh coriander leaves, chopped green chilies, and a dash of lemon juice.
- Finally, drizzle some desi ghee on top and serve hot.
