Ingredients for Punjabi Makhdi Halwa
To make Punjabi Makhdi Halwa, you will need the following ingredients:
- Fine semolina (1/2 cup)
- Milk (2-3 cups)
- Cardamom powder (1/2 tsp)
- Dry fruits (cashews, almonds, raisins, chironji, etc.)
- Pure ghee
- Sugar (as per taste)
This amount of ingredients will serve approximately 4 people.
Recipe for Makhdi Halwa
- To begin making the famous Punjabi Makhdi Halwa, take 1/2 cup of semolina in a large bowl. Add about 2 cups of milk and mix well. Leave the mixture aside for about an hour.
- Heat a kadhai (wok) on the stove. Once it’s well-heated, add pure ghee to it. Roast the chopped dry fruits (cashews, almonds, raisins, chironji) in the ghee until they turn light brown. Do not over-roast; just a light browning will do. Once done, take them out and set them aside.
- In the same kadhai, add some more ghee. Once it’s heated, pour in the semolina and milk mixture. Keep stirring until the mixture turns a light brown color and starts to separate from the kadhai. Once it reaches this stage, transfer it to another bowl.
- Now, add a little more ghee to the kadhai. Once the ghee heats up, add sugar and stir continuously until it forms a syrup. Cook it until it thickens and forms a sticky consistency.
- Add the roasted semolina and milk mixture along with cardamom powder to the syrup. Mix everything thoroughly. Let it cook for a few more minutes, then turn off the heat.
