In the summer, people often turn to mango-based dishes and drinks to keep their bodies cool. These recipes are not only delicious but also provide health benefits. One such delightful dish is Mango Rabri. This dessert can be served after lunch or dinner and is loved by both kids and adults alike. Plus, it’s super easy to make! Let’s dive right into how to prepare this tasty summer treat.
Ingredients for Mango Rabri
- 1 liter full cream milk
- 2 ripe mangoes (pureed)
- 1/2 cup sugar
- 1/4 teaspoon cardamom powder
- 8-10 saffron strands (soaked in milk)
- 10-12 chopped almonds and pistachios
- 1 teaspoon ghee
How to Make Mango Rabri
- Boil the Milk
Start by boiling the milk in a heavy-bottomed pan over medium heat. Once it comes to a boil, reduce the flame and let it simmer. Stir occasionally to prevent the milk from sticking to the bottom of the pan. - Thicken the Milk
Continue to cook the milk until it reduces to half its original volume. Meanwhile, scrape the cream (malai) from the sides and push it back into the milk. This will make the rabri rich and thick. - Add Sugar
Once the milk thickens, add the sugar and stir well. Let it cook until the sugar dissolves completely. - Mix Mango Puree
Lower the flame and add the mango puree. Mix thoroughly and cook for another 5-7 minutes so the flavors of mango and milk blend beautifully. - Add Flavors
Now add cardamom powder and the soaked saffron. Let it simmer for another 2-3 minutes. - Garnish and Chill
Turn off the flame and garnish the rabri with chopped almonds and pistachios. Let it cool to room temperature, then refrigerate it for a few hours. - Serve Chilled
Your chilled Mango Rabri is ready to serve! Pour it into bowls and enjoy the rich, creamy flavor.
Tips to Make the Perfect Mango Rabri
- Always use fresh and sweet mangoes for the best taste.
- Simmer the milk on low flame to thicken it properly.
- For an enhanced flavor, sprinkle a few drops of rose water before serving.
