Holi is incomplete without a variety of sweets, and if you are someone who makes only Gujiya every year, this Holi, try making crispy and tasty Balushahi! This popular sweet from Uttar Pradesh is made during festivals and weddings alike. If you want to make Balushahi just like the halwai, follow this simple recipe.
Ingredients for Balushahi:
- 2 cups all-purpose flour (maida)
- ½ cup desi ghee
- Milk (as required)
- ½ tsp baking powder
- Ghee for frying
- 2 cups sugar
- 2 cups water
- Saffron strands
- A pinch of yellow food color
- Silver work (for garnishing)
- Pistachios (for garnishing)
- Rose petals (for garnishing)
Recipe for Making Balushahi:
- Sift the flour in a bowl and then add the baking powder and desi ghee. Mix well.
- Gradually add milk to knead the dough, ensuring it is a little stiff (not too soft).
- Let the dough rest for about 10 minutes.
- After resting, take the dough and roll it into a thick ball.
- Roll out the dough into a thick circle, and then cut it into half. Make another cut to create smaller triangular pieces.
- Now take one piece, roll it in your hands, and shape it back into a round ball. The dough should not be smooth; it should have rough layers. The more layers you have, the crispier the Balushahi will be.
- Cut the dough into small round balls and gently press them flat with your fingers. Use a spoon to make a small hole in the center of each piece.
- Heat ghee in a pan on medium flame and fry the Balushahi until golden brown and crisp.
- For the syrup, add 2 cups of sugar and 1 cup of water to a pan. Add saffron strands and a pinch of yellow food color. Stir well and cook until the syrup forms a two-string consistency.
- Once the Balushahi are fried, dip them in the hot sugar syrup and let them soak for a while.
- Garnish with silver work, pistachios, and rose petals.
