Amla (Indian Gooseberry) is a must-have in your diet during winters. You’ve probably heard about its numerous benefits, and there’s no good reason not to include it. Amla is rich in vitamin C and antioxidants, which are great for boosting immunity. Overall, amla is incredibly beneficial for your health. For those who find its sour taste unpleasant, amla is often enjoyed as a delicious murabba (preserved fruit). However, murabba is typically made with sugar, which many people avoid. So, let’s learn how to make sugar-free amla murabba without jaggery or sugar.
Ingredients for Sugar-Free Amla Murabba:
- Amla (500 grams)
- Threaded misri (500 grams)
- Cardamom powder (1/2 teaspoon)
- A pinch of black salt (less than 1/2 teaspoon)
- Dry ginger powder (1/2 teaspoon)
- Water as needed
Method for Making Sugar-Free Amla Murabba:
- Soak the Amla: Start by thoroughly washing the amlas and soaking them in water overnight. The next morning, wipe the amlas dry using a cloth.
- Make Small Holes in the Amla: Using a fork, make small holes in each amla to allow the flavors to seep in.
- Cook the Amla: Heat some water in a pot. Once the water is hot, add the amlas and cook them on medium heat for 7-8 minutes until they soften. Afterward, remove them from the water and set them aside.
- Prepare Misri (Crystal Sugar): To sweeten the amla, crush the threaded misri using a rolling pin or a silbatta (stone grinder). Then, grind it into a fine powder using a mixer.
- Cook the Murabba: In a pan, add the misri powder and amlas, along with about 4-5 tablespoons of water. Mix everything well. Let it cook on low heat, covered, for about 40-50 minutes. Stir occasionally to prevent it from sticking. Once the murabba is ready, add black salt, cardamom powder, and dry ginger powder for extra flavor.
- Serve: Your tasty and healthy sugar-free amla murabba is now ready to enjoy!
