Doda Barfi holds a special place among traditional Indian sweets. It is usually prepared using wheat, milk, and ghee, but when made with sprouted wheat, the taste as well as the nutritional value increases significantly. Sprouted wheat is rich in protein, fiber, and essential nutrients, making this sweet both delicious and relatively healthier. Here is a simple method to prepare granular and flavorful Doda Barfi using sprouted wheat at home.
Ingredients
- Sprouted wheat – 1 cup
- Milk – 2 cups
- Ghee – ½ cup
- Sugar – ¾ cup (adjust according to taste)
- Khoya (mawa) – ½ cup
- Cashews – 2 tablespoons (chopped)
- Almonds – 2 tablespoons (chopped)
- Pistachios – 1 tablespoon
- Cardamom powder – ½ teaspoon
Preparation Method
First, lightly dry the sprouted wheat and grind it in a mixer to a coarse texture. Do not grind it into a fine powder, as the authentic taste of Doda Barfi comes from its slightly grainy texture.
Heat ghee in a heavy pan and add the ground sprouted wheat. Roast it on medium heat while stirring continuously until it turns light brown and releases a pleasant aroma. Then add milk and mix well, allowing the mixture to cook until it begins to thicken.
Once the mixture thickens slightly, add the khoya and mix thoroughly. Now add the sugar and cook on low heat while stirring continuously. After a few minutes, the mixture will become thick and start leaving the sides of the pan.
At this stage, add the chopped cashews, almonds, pistachios, and cardamom powder. Mix everything well.
Grease a tray or plate with ghee and spread the prepared mixture evenly over it. Press it gently with a spatula to level the surface. If desired, sprinkle a few dry fruits on top for garnish.
Allow the mixture to cool slightly, then cut it into your desired shapes.
