Gond (edible gum) is a treasure trove of health benefits during winter. It is commonly used to prepare laddoos, halwa, and barfi. Made with dry fruits, gond not only keeps the body warm but also provides an excellent source of energy. For those who have a sweet tooth but suffer from diabetes, you can prepare Gur Pak (sweetened with jaggery instead of sugar). It is both delicious and can be stored for months.
Ingredients for Gond Pak
- 8 tbsp Ghee
- 1/4 cup Edible Gum (Gond)
- 1 cup Mixed Dry Fruits (e.g., almonds, cashews, pistachios)
- 1/4 cup Dry Coconut (grated or sliced)
- 2 tbsp Poppy Seeds
- 2 tbsp Dry Ginger Powder
- 1 tsp Cardamom Powder
- 1/2 tsp Nutmeg Powder
- 400 g Dates (seedless)
How to Prepare Gond Pak
- Roast the Gond:
Heat 4 tablespoons of ghee in a pan on low to medium heat. Add 1/4 cup of edible gum and roast it for about 10 minutes until it puffs up. Remove from heat, let it cool, and coarsely crush it. - Roast the Dry Fruits:
In the same pan, add 2 tablespoons of ghee and roast 1 cup of mixed dry fruits (almonds, cashews, pistachios) until lightly golden. Add 1/4 cup of dry coconut and 2 tablespoons of poppy seeds to the mixture. Stir well and turn off the heat. Allow the mixture to cool and chop the dry fruits roughly. - Mix the Spices:
Combine the roasted gum with the chopped dry fruits. Add 2 tablespoons of dry ginger powder, 1 teaspoon of cardamom powder, and 1/2 teaspoon of nutmeg powder. Mix everything thoroughly and set aside. - Prepare the Dates Mixture:
Heat 2 tablespoons of ghee in a pan. Add 400 grams of seedless dates and cook on medium heat until they become soft and form a paste-like consistency. - Combine Everything:
Add the prepared gum and dry fruit mixture into the dates paste. Mix well to form a cohesive mixture. - Set the Gond Pak:
Grease a tray with ghee and pour the mixture into it. Spread it evenly and let it cool completely. Once set, cut into desired shapes.
Storage and Shelf Life
Your sugar-free Gond Pak is ready! Store it in an airtight container, and it will stay fresh for up to a month. Enjoy this healthy and nutritious winter treat guilt-free!
