On the occasion of Makar Sankranti, there is a tradition of making a variety of laddoos. Besides sesame, jaggery, and peanuts, many households also prepare laddoos by wrapping besan (gram flour) in jaggery. These are tasty and loved by all. If you want to try something new this Sankranti, then you can easily make Sev and Jaggery Laddoos. Here’s a simple recipe to note down.
Ingredients for Sev Laddoo:
- 250 grams of besan (gram flour)
- 100 grams of jaggery
- 1/4 teaspoon of baking soda
- 3 teaspoons of refined oil (for moyan)
- Oil for frying
Recipe for Sev Laddoo:
- First, take a bowl and add besan. Mix in the baking soda and if you like, you can also add 1 teaspoon of fennel seeds.
- Mix the besan well and add 2-3 teaspoons of oil for moyan. Mix it well with your hands so that the besan starts binding together.
- Now, add some water to knead into a soft dough.
- Grease your hands with oil and shape the dough, then fill it into a sev maker.
- Heat oil in a kadhai for frying, and once it’s hot, press the sev maker directly into the hot oil to release the besan sev.
- Fry until the sev turns golden brown, then remove them from the oil.
- If you don’t have a sev maker, you can use a slotted spoon to make sev.
- Crush the fried sev and break them into small pieces and set them aside.
- In a kadhai, break the jaggery into small pieces and add it to the pan. This will help it melt easily.
- Add 2-3 teaspoons of water and a little ghee to prevent the jaggery from sticking to the pan.
- Once the jaggery melts completely, check the consistency of the syrup by dropping it into a glass of water. If it forms a ball shape, the syrup is ready.
- Reduce the heat and add the crushed sev to the syrup, stirring well to coat all the sev with the jaggery syrup.
- Turn off the flame and quickly shape the mixture into laddoos by wetting your hands with water.
- If you prefer, you can also spread the mixture in a plate and shape it into burfi instead of laddoos.
