- Water – as needed to knead the dough
For the Filling:
- Mawa (Khoya) – 1 cup
- Sugar – ½ cup
- Chopped cashews, almonds, pistachios – 2–3 tablespoons
- Cardamom powder – ½ teaspoon
- Raisins – 2 tablespoons
For the Syrup:
- Sugar – 1 cup
- Water – ½ cup
- Saffron strands – a few (optional)
- Cardamom powder – ¼ teaspoon
Method:
1. Prepare the Dough:
Sift the flour into a bowl. Add ghee and mix well. Gradually add water and knead into a soft dough. Cover and rest for 30 minutes.
2. Prepare the Filling:
Lightly roast the mawa in a pan. Add sugar, chopped nuts, raisins, and cardamom powder. Mix well and let it cool.
3. Shape the Gujia:
Divide the dough into small balls and roll into thin circles. Place the filling in the center of each circle and fold the edges to seal tightly.
4. Fry the Gujia:
Heat ghee in a pan and fry the gujias on medium heat until golden brown.
5. Prepare the Syrup:
In a pan, boil sugar and water together. Once it becomes slightly thick, add saffron and cardamom powder.
6. Dip Gujia in Syrup:
Dip the fried gujias in the warm syrup for 2–3 minutes, then remove and let them set.
Serving Suggestion:
Serve the syrupy mawa gujia once slightly cooled. These sweets make Holi celebrations even more special, adding both flavor and festivity to your home.
Tip: You can add a few drops of rose water to the syrup for an extra aromatic touch.
