Ingredients for Mango Basundi:
- 1 liter full cream milk
- 1 cup mango pulp
- ½ cup sugar
- ¼ tsp cardamom powder
- 8–10 saffron strands
- 10–12 chopped almonds and pistachios
- 1 tbsp rose water
How to Make Mango Basundi:
- In a heavy-bottomed pan, pour the milk and bring it to a boil over medium heat.
- Stir continuously to prevent the milk from sticking to the bottom and burning.
- Boil until the milk reduces to half its original quantity. This may take about 30–40 minutes.
- Once the milk thickens, add sugar and stir well. Cook for another 5–7 minutes.
- Lower the heat, add the mango pulp, and mix thoroughly. Let it cook for 2–3 more minutes.
- Now add cardamom powder, saffron strands, and rose water. Mix everything gently.
- Garnish with chopped almonds and pistachios.
