This Malai Kulfi Is Sweet Without Sugar or Honey!

As soon as summer begins, we often crave foods that are not only cooling in nature but also incredibly tasty. Some recipes are so refreshing that they uplift both the body and soul with just one bite. One such favorite among children is Malai Kulfi. Not only is this recipe delicious, but it’s also a perfect option for fitness enthusiasts.

What makes this kulfi special is that it requires no sugar or even honey—yet it doesn’t fall short on sweetness! This delightful dessert was shared by Chef Bhupendra Rawat on his Instagram account Honest Kitchen. So let’s dive into the process of making this tasty and healthy sugar-free malai kulfi.

Ingredients for Sugar-Free Malai Kulfi

  • 100 grams dates (seedless)
  • 30 grams almonds
  • 30 grams cashews
  • 30 grams pistachios
  • 1 liter full cream milk
  • 10–12 green cardamoms
  • 10–15 saffron strands
  • 1 mango (pulped)
  • 1 sapota/chikoo (pulped)

How to Make Malai Kulfi (Sugar-Free)

  1. Prep the Dates:
    Remove the seeds from the dates and spread them out on a plate.
  2. Dry Roast the Nuts:
    Heat a pan on medium-low flame. Add almonds, cashews, pistachios, and cardamoms. Dry roast them until aromatic. This enhances the flavor of the kulfi.
  3. Boil the Milk:
    In a heavy-bottomed pan, add a splash of water, then pour in the full cream milk. Let it come to a boil. Once boiling, lower the flame and let it reduce to half its volume.
  4. Make Nut Powder:
    Once the nuts have cooled, blend them with saffron strands to make a coarse powder.
  5. Prepare the Date Paste:
    Blend the seedless dates with a little boiled milk to form a smooth paste.
  6. Combine Everything:
    Mix the date paste into the thickened milk. Add the nut and saffron powder and stir well until combined. You’ll see a rich, creamy kulfi mixture forming.
  7. Freeze the Kulfi:
    Pour this mixture into kulfi molds and freeze for 6–8 hours.
  8. Demold and Serve:
    To demold, rub the mold gently between your hands to loosen the kulfi. Use a knife or skewer to take it out easily.
  9. Garnish (Optional):
    You can top the kulfi with mango and chikoo purée before serving for an extra fruity twist.
