- Bhindi (Okra) – 250 grams
- Onions – 3 (sliced)
- Tomatoes – 2 (chopped)
- Cumin Seeds – ½ teaspoon
- Black Cardamom – 1
- Fenugreek Seeds – ¼ teaspoon
- Cinnamon Stick – 1-inch piece
- Turmeric Powder – ½ teaspoon
- Red Chili Powder – ½ teaspoon
- Coriander Powder – ½ teaspoon
- Garam Masala Powder – ½ teaspoon
- Amchur (Dry Mango Powder) – ½ teaspoon
- Salt – as per taste
- Oil – 4 tablespoons
How to Make Restaurant-Style Bhindi Do Pyaza
- Prepare the Bhindi
- Cut the bhindi into long pieces and make a small slit in the middle, just like you do for stuffed bhindi.
- Heat 2 tablespoons of oil in a pan and lightly fry the bhindi for about 4-5 minutes. Once done, remove from the pan and set aside.
- Prepare the Onions
- In the same pan, heat 1 tablespoon of oil and sauté the sliced onions for a few minutes until they turn light pink (they should remain slightly raw). Remove and set aside.
- Prepare the Masala
- Add 3 tablespoons of oil to the pan.
- Once the oil is hot, add black cardamom, cinnamon, cumin seeds, and fenugreek seeds.
- After a few seconds, add sliced green chilies and sauté lightly.
- Now, add the finely chopped onions and sauté until golden brown.
- Add ginger-garlic paste and cook until the raw smell disappears.
- Next, add the chopped tomatoes and cook everything on low flame until well combined.
- Mix in the turmeric, red chili powder, coriander powder, and salt and cook for about 1 minute.
- Combine Everything
- Once the masala is well cooked, add the fried bhindi and sautéed onions back into the pan.
- Mix everything well while keeping the flame on low heat.
- Cover the pan and let it cook for 8-10 minutes.
- Finally, add garam masala and amchur powder, mix well, and cook for another minute.
