During winters, people often crave spicy and warm recipes that not only tantalize their taste buds but also take care of their health. One such recipe is Pahadi Rajma. A popular dish from Uttarakhand, this variant of rajma is larger and thicker in size compared to the regular kind. Packed with nutrients, it offers multiple health benefits. Ingredients for Pahadi Rajma
- 2 cups of Pahadi Rajma (soaked overnight)
- 4 tbsp oil
- 1/2 cup onion, ginger-garlic paste
- 2 chopped tomatoes
- 2 chopped green chilies
- 1 tsp cumin seeds
- 5 cloves
- 1 bay leaf
- 1 piece of cinnamon
- 1 tsp sugar
- Salt to taste
- 2 tsp kasuri methi
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1/2 tsp cumin powder
- 1/2 tsp turmeric powder
- 1 tsp garam masala
- Chopped fresh coriander for garnish
Method to Prepare Pahadi Rajma
- Cook the Rajma:
Wash the soaked Pahadi Rajma thoroughly. In a pressure cooker, add the rajma along with 3–4 cups of water, salt, bay leaf, cloves, and cinnamon. Cook until 4–5 whistles. - Prepare the Masala:
Heat oil in a pan and add cumin seeds. Allow them to splutter. Then, add finely chopped onions and sauté until golden brown. - Add Aromatics:
Add ginger-garlic paste and green chilies. Sauté until the raw smell disappears. - Cook Tomatoes:
Add chopped tomatoes to the pan and cook until soft. - Add Spices:
Mix in turmeric powder, coriander powder, red chili powder, and salt. Cook the spices until they release oil from the sides of the pan. - Combine with Rajma:
Add the boiled rajma to the pan. Mix well, ensuring the rajma is coated with the masala. - Simmer:
Add water as needed and let it simmer on low heat for 10–15 minutes to allow the flavors to blend. - Finish with Garam Masala:
Sprinkle garam masala, cover, and let it cook for a few more minutes. - Garnish and Serve:
Garnish with freshly chopped coriander. Serve hot with rice or roti.
